Three chefs and a registered nutritionist agree that opened mayonnaise should be refrigerated, whether shop-bought or homemade. Unopened commercial mayonnaise can be stored in a cool, dark cupboard, while homemade mayonnaise containing raw egg should be kept cold and eaten within a few days. Mayonnaise should not be left at room temperature for more than four hours, particularly in hot conditions, and leftovers left out too long should be discarded. Hellmann's and Heinz give similar refrigeration guidance and advise using clean utensils; mayonnaise should not be frozen because its emulsion can separate.
